These peppers are loaded with shrimp, veggies, and cream cheese, making them a perfect keto and low-carb meal.

Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 lb raw shrimp, peeled and deveined
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat olive oil over medium-high heat. Add shrimp and sauté until cooked, about 3-4 minutes. Remove from pan and set aside.

  3. In the same skillet, add onion, celery, and red bell pepper. Sauté until veggies are softened and fragrant, about 5-7 minutes. Remove from heat and let cool for a few minutes.

  4. In a large mixing bowl, combine veggies, cream cheese, and shredded cheddar cheese. Mix well.

  5. Stuff each bell pepper half with the shrimp and veggie mixture.

  6. Place stuffed bell peppers on a baking sheet and bake in the oven for 20-25 minutes, until the peppers are tender and the cheese is melted and bubbly.

  7. Serve hot and enjoy!
