These Sushi Rolls are made with canned salmon, avocado, and cucumber – a quick and easy sushi recipe that’s perfect for meal prep or a quick lunch.

In a small bowl, mix together rice vinegar, sugar, and salt.

Add this mixture to cooked sushi rice, and mix well until fully coated.

Place a sheet of sushi nori on a bamboo sushi mat, shiny side down.

Spoon a quarter of the sushi rice onto the nori, and press it out in an even layer.

Leaving a 1-inch border at the top, arrange slices of avocado, cucumber, and canned salmon on top of the rice.

Using the bamboo mat, tightly roll the sushi, pressing down to ensure it’s tightly packed.

Wet the border of the nori with a little water to seal the roll and repeat with remaining nori and ingredients.

Using a sharp knife, slice each roll into 8 pieces and serve with soy sauce and wasabi.
