How To Make Canned Salmon and Vegetable Stir-Fry

A healthy and delicious stir-fry using canned salmon and fresh vegetables.

Ingredients

  • 2 tbsp oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 zucchini, sliced
  • 1 can of salmon, drained
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • Salt and pepper to taste
  • Rice to serve

Instructions

  1. Heat oil in a wok or large pan over medium-high heat.

  2. Add onion and garlic and stir-fry for 1-2 minutes until softened.

  3. Add sliced peppers and zucchini and continue to stir-fry for 2-3 minutes until vegetables are tender-crisp.

  4. Add canned salmon and stir-fry for another minute.

  5. In a small bowl, whisk together soy sauce, cornstarch, and 1/4 cup water. Pour over the stir-fry and stir to combine.

  6. Season with salt and pepper to taste and serve with rice.
