Delicious sushi rolls filled with fresh salmon and crisp cucumber, perfect for a light meal or appetizer.

Ingredients

  • 2 cups sushi rice
  • 4 sheets nori seaweed
  • 1/2 pound fresh salmon, thinly sliced
  • 1 cucumber, cut into thin strips
  • Soy sauce, for serving
  • Wasabi and pickled ginger, for serving

Instructions

  1. Cook sushi rice according to package instructions and let it cool.

  2. Place a sheet of nori on a bamboo sushi mat or a sheet of plastic wrap.

  3. Wet your hands and spread about 1/2 cup of sushi rice evenly on the nori, leaving a 1-inch border.

  4. Lay salmon slices and cucumber strips on top of the rice.

  5. Roll the sushi tightly, using the mat or plastic wrap to help shape it.

  6. Repeat with remaining ingredients.

  7. Slice each roll into bite-sized pieces and serve with soy sauce, wasabi, and pickled ginger.
