How To Make Canned Salmon Stuffed Peppers Recipe

Bell peppers stuffed with flavorful canned salmon and seasonings.

Ingredients

  • 4 bell peppers (any color)
  • 1 can of salmon (14.75 oz)
  • 1 cup cooked rice
  • 1/4 cup chopped onion
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F.

  2. Cut off the tops of the peppers and remove the seeds and membranes. Place peppers in a baking dish.

  3. In a skillet, sauté onion and garlic in olive oil until soft.

  4. Add cooked rice, canned salmon, lemon juice, basil, salt, and black pepper. Stir to combine.

  5. Spoon mixture into each pepper, filling to the top.

  6. Sprinkle shredded cheese on top of the peppers.

  7. Bake for 25-30 minutes or until the cheese is melted and the peppers are tender.

  8. Garnish with fresh parsley and serve.
