How To Make Pulled Pork Stuffed Sweet Potatoes
Tender pulled pork piled high on top of perfectly roasted sweet potatoes

Ingredients
- 4 large sweet potatoes
- 2 lbs of pulled pork
- 1 cup of your favorite BBQ sauce
- 2 tbsp of olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F.

Pierce sweet potatoes all over with a fork and rub with olive oil. Place on a baking sheet and season with salt and pepper. Bake for 45-50 minutes or until fully cooked.

While the sweet potatoes are baking, heat the pulled pork and BBQ sauce in a saucepan over medium heat.

Remove sweet potatoes from oven and cut a slit in the top. Stuff each sweet potato with a generous amount of pulled pork mixture.

Serve hot, garnished with additional BBQ sauce and chopped green onions, if desired.
