How To Make Pineapple and Jalapeno Glazed Pork Tenderloin

Sweet and spicy glazed pork tenderloin with pineapple and jalapeno.

Ingredients

  • 1 lb pork tenderloin
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tbsp jalapeno, diced
  • 1 tbsp cornstarch
  • 1 tbsp water
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F.

  2. Season pork tenderloin with salt and pepper and place on a baking sheet.

  3. In a small saucepan, combine pineapple juice, brown sugar, soy sauce, and jalapeno. Cook over medium heat until sugar has dissolved.

  4. Brush pork with glaze and bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F.

  5. While the pork is cooking, combine cornstarch and water in a small bowl to make a slurry. Add slurry to the remaining glaze in the saucepan and cook until thickened.

  6. Once the pork is cooked, brush with additional glaze and let rest for 5 minutes before slicing.
