This recipe features crispy and garlicky bruschettas topped with buttery sauteed Chanterelle mushrooms.

Ingredients

  • 8 slices of baguette bread
  • 2 cups of Chanterelle mushrooms, cleaned and chopped
  • 2 cloves of garlic, minced
  • 2 tbsp of unsalted butter
  • 2 tbsp of olive oil
  • Salt and black pepper
  • 1/4 cup of grated Parmesan cheese
  • 1 tsp of chopped fresh parsley

Instructions

  1. Preheat oven to 400°F. Arrange bread slices on a baking sheet and brush with olive oil, then bake for 5-7 minutes until golden brown and crispy.

  2. In a large skillet over medium heat, melt butter and add minced garlic. Stir for 30 seconds until fragrant.

  3. Add chopped mushrooms and cook for 5-7 minutes until tender and lightly browned. Season with salt and black pepper.

  4. Top each bruschetta with a spoonful of sauteed mushrooms, then sprinkle with grated Parmesan cheese and chopped parsley. Serve warm.
