Ingredients

  • 1 pork tenderloin, about 1 pound
  • 2 peaches, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill or oven to medium-high heat.

  2. Season the pork tenderloin with salt, pepper, and dried thyme.

  3. In a large skillet, heat the olive oil over medium-high heat.

  4. Add the pork tenderloin and sear on all sides until browned, about 2-3 minutes per side.

  5. Remove the pork tenderloin from the skillet and set aside.

  6. In the same skillet, add the sliced peaches and minced garlic.

  7. Cook for 2-3 minutes until the peaches are softened.

  8. Return the pork tenderloin to the skillet and cook for an additional 15-20 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium, using a meat thermometer.

  9. Remove the pork tenderloin from the skillet and let it rest for 5 minutes before slicing.

  10. Serve the sliced pork tenderloin with the cooked peaches on top.
