Ingredients

  • 1 1/2 lbs pork tenderloin
  • 4 cloves of garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup sliced mushrooms
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Season the pork tenderloin with minced garlic, salt, and black pepper.

  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the tenderloin on all sides until browned.

  4. Transfer the skillet to the preheated oven and cook the tenderloin for about 20-25 minutes, or until it reaches an internal temperature of 145°F (63°C).

  5. Remove the pork from the skillet and let it rest for 5 minutes before slicing.

  6. In the same skillet, melt the butter over medium heat. Add sliced mushrooms and sauté until they are tender and slightly browned.

  7. Sprinkle flour over the mushrooms and stir to coat them. Cook for about 1 minute.

  8. Slowly whisk in the chicken broth and bring the mixture to a simmer. Cook for 5 minutes, or until the gravy thickens.

  9. Stir in the heavy cream and cook for an additional 2 minutes.

  10. Serve the sliced pork tenderloin with the mushroom gravy.
