Ingredients

  • 2 lbs pork loin
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 cup chicken broth
  • 2 tbsp all-purpose flour

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Rub the pork loin with olive oil, salt, black pepper, dried thyme, and garlic powder.

  3. Place the pork loin on a roasting pan and roast in the preheated oven for 1 hour or until the internal temperature reaches 145°F (63°C).

  4. Remove the pork loin from the oven and let it rest for 10 minutes before slicing.

  5. While the pork is resting, make the pan gravy. Place the roasting pan on the stove over medium heat.

  6. Add chicken broth to the pan and scrape off any browned bits.

  7. In a small bowl, whisk together flour and 1/4 cup of water to make a slurry.

  8. Gradually pour the slurry into the roasting pan, stirring constantly until the gravy thickens.

  9. Slice the roasted pork loin and serve with the pan gravy.
