  • 2 lb pork loin
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 1/4 cup fresh pineapple chunks (optional)


  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix together pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, black pepper, and salt.

  3. Place the pork loin in a baking dish and pour the pineapple juice mixture over it. Make sure the pork is coated evenly.

  4. Cover the dish with foil and bake for 1 hour.

  5. After an hour, remove the foil and continue baking for another 30 minutes or until the pork is cooked through and the top is caramelized.

  6. In a small bowl, mix cornstarch and water until smooth. Pour the mixture into the baking dish with the pork and pineapple juice. Stir well.

  7. Return the dish to the oven and bake for an additional 10 minutes or until the sauce has thickened.

  8. Remove from the oven and let the pork rest for a few minutes.

  9. Slice the pork loin and serve with the thickened pineapple sauce. Optionally, garnish with fresh pineapple chunks.
