How To Make Pork Chops with Rhubarb & Grains

Serves:

Ingredients

  • 4 pork chops
  • 1 cup rhubarb, chopped
  • 1/4 cup honey
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups cooked grains (such as quinoa or brown rice)

Instructions

  1. Season the pork chops with salt, pepper, and dried thyme.

  2. In a large skillet, heat olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes per side, or until browned and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add the chopped rhubarb, honey, and balsamic vinegar. Cook over medium heat for 5-7 minutes, or until the rhubarb is tender and the sauce has thickened slightly.

  4. Return the pork chops to the skillet and coat them in the rhubarb sauce. Cook for an additional 2 minutes, until the pork chops are heated through.

  5. Serve the pork chops over a bed of cooked grains. Spoon the rhubarb sauce over the top.

  6. Enjoy!
