How To Make Squash Quesadillas
Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients
- 2 cups of cooked butternut squash, mashed
- 1 cup of shredded cheese (cheddar or Monterey Jack)
- 1/2 cup of diced red onion
- 1/2 cup of diced red bell pepper
- 1/4 cup of chopped fresh cilantro
- 1 tsp of ground cumin
- 1/2 tsp of chili powder
- 8 small flour tortillas
- Salt and pepper to taste
- Cooking spray
- Guacamole, salsa, and sour cream for serving
Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, combine the mashed butternut squash, shredded cheese, diced red onion, diced red bell pepper, chopped cilantro, ground cumin, and chili powder. Mix well.

Lay out 4 of the flour tortillas on the prepared baking sheet. Divide the squash mixture evenly among the tortillas, spreading it out to cover.

Top each tortilla with another tortilla, creating a quesadilla sandwich.

Lightly spray the tops of the quesadillas with cooking spray and season with salt and pepper.

Bake in the preheated oven for 20-25 minutes, or until the quesadillas are crisp and the cheese is melted.

Remove from the oven and let cool for a few minutes before slicing into wedges.

Serve the squash quesadillas with guacamole, salsa, and sour cream.
