How To Make Squash Quesadillas

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 2 cups of cooked butternut squash, mashed
  • 1 cup of shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup of diced red onion
  • 1/2 cup of diced red bell pepper
  • 1/4 cup of chopped fresh cilantro
  • 1 tsp of ground cumin
  • 1/2 tsp of chili powder
  • 8 small flour tortillas
  • Salt and pepper to taste
  • Cooking spray
  • Guacamole, salsa, and sour cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the mashed butternut squash, shredded cheese, diced red onion, diced red bell pepper, chopped cilantro, ground cumin, and chili powder. Mix well.

  3. Lay out 4 of the flour tortillas on the prepared baking sheet. Divide the squash mixture evenly among the tortillas, spreading it out to cover.

  4. Top each tortilla with another tortilla, creating a quesadilla sandwich.

  5. Lightly spray the tops of the quesadillas with cooking spray and season with salt and pepper.

  6. Bake in the preheated oven for 20-25 minutes, or until the quesadillas are crisp and the cheese is melted.

  7. Remove from the oven and let cool for a few minutes before slicing into wedges.

  8. Serve the squash quesadillas with guacamole, salsa, and sour cream.
