How To Make Pork with Black Pudding & Roasted Rhubarb

Ingredients

  • 4 pork chops
  • 200g black pudding, sliced
  • 500g rhubarb, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Season the pork chops with salt and pepper on both sides.

  3. Heat the olive oil in a large pan over medium heat. Sear the pork chops for 3-4 minutes on each side until browned.

  4. Transfer the pork chops to a baking dish and top each chop with slices of black pudding.

  5. In a separate baking dish, spread out the chopped rhubarb and drizzle with olive oil. Season with salt and pepper.

  6. Place both the pork chops and rhubarb in the preheated oven. Roast for 20-25 minutes or until the pork is cooked through and the rhubarb is tender.

  7. Remove from the oven and let the pork chops rest for 5 minutes before serving.

  8. Serve the pork chops on a plate with a side of roasted rhubarb.
