Ingredients
- 1 lb pork tenderloin, cut into bite-sized pieces
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons ketchup
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 carrot, sliced
- 1 clove garlic, minced
- 2 tablespoons vegetable oil
Instructions

In a small bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, and cornstarch. Set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and cook until fragrant.

Add pork tenderloin pieces to the skillet and cook until browned on all sides.

Remove pork from the skillet and set aside.

In the same skillet, add bell pepper, onion, and carrot. Cook until vegetables are crisp-tender.

Return the pork to the skillet and pour the sauce over the pork and vegetables. Stir to coat everything evenly.
