Preparation: 15 minutes
Cooking: 10 minutes
Total: 25 minutes

Serves:

Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup warm water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 cup mixed vegetables (such as lettuce, tomatoes, cucumbers, peppers, etc.)
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the whole wheat flour, warm water, olive oil, and salt. Knead until a smooth dough forms.

  2. Divide the dough into 4 equal-sized portions. Roll out each portion on a lightly floured surface into a thin circular shape.

  3. Heat a non-stick pan over medium heat. Cook each wrap for about 1-2 minutes on each side, or until golden brown spots appear.

  4. In a small bowl, mix together Greek yogurt, lemon juice, minced garlic, salt, and pepper to make the dressing.

  5. Assemble the wraps by spreading a generous amount of dressing on each wrap. Top with mixed vegetables of your choice.

  6. Roll up the wraps tightly and secure with toothpicks, if desired.

  7. Serve the whole wheat wraps immediately and enjoy!
