How To Make Low-Carb Yellow Squash Casserole

Ingredients
- 4 medium yellow squash, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup almond flour
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat.

Add the onions and garlic to the skillet and sauté until softened.

Add the sliced yellow squash to the skillet and cook for about 5 minutes, until slightly tender.

In a separate bowl, combine the almond flour, Parmesan cheese, thyme, oregano, salt, and pepper.

Transfer the cooked yellow squash mixture to a baking dish.
