How To Make Curried Tofu Wraps

Ingredients

  • 1 package of firm tofu, drained and pressed
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil
  • 1 cup sliced bell peppers
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 4 whole wheat tortillas
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, crumble the tofu and add curry powder, turmeric, and soy sauce. Mix well to coat the tofu and let it marinate for 10 minutes.

  2. Heat vegetable oil in a skillet over medium heat. Add the marinated tofu and cook for 5-7 minutes, until golden and crispy. Remove from heat and set aside.

  3. In a small bowl, combine vegan mayonnaise, lime juice, salt, and pepper. Mix well to make the sauce.

  4. Warm the tortillas in a dry skillet or microwave.

  5. Spread a spoonful of the sauce on each tortilla. Top with cooked tofu, bell peppers, shredded carrots, and sliced cucumber.

  6. Roll up the tortilla tightly to form a wrap. Repeat with the remaining ingredients.

  7. Serve the curried tofu wraps immediately, garnished with fresh cilantro.
