How To Make Curried Tofu Wraps

Ingredients
- 1 package of firm tofu, drained and pressed
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 tablespoon soy sauce
- 2 tablespoons vegetable oil
- 1 cup sliced bell peppers
- 1 cup shredded carrots
- 1/2 cup sliced cucumber
- 4 whole wheat tortillas
- 1/4 cup vegan mayonnaise
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

In a bowl, crumble the tofu and add curry powder, turmeric, and soy sauce. Mix well to coat the tofu and let it marinate for 10 minutes.

Heat vegetable oil in a skillet over medium heat. Add the marinated tofu and cook for 5-7 minutes, until golden and crispy. Remove from heat and set aside.

In a small bowl, combine vegan mayonnaise, lime juice, salt, and pepper. Mix well to make the sauce.

Warm the tortillas in a dry skillet or microwave.

Spread a spoonful of the sauce on each tortilla. Top with cooked tofu, bell peppers, shredded carrots, and sliced cucumber.

Roll up the tortilla tightly to form a wrap. Repeat with the remaining ingredients.

Serve the curried tofu wraps immediately, garnished with fresh cilantro.
