Ingredients

  • 1 lb ground deer meat
  • 1/4 cup cold water
  • 2 tbsp liquid smoke
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1 tbsp mustard seeds
  • 1 tsp black pepper
  • 1 tsp sugar
  • 1/2 tsp curing salt
  • 1/4 tsp red pepper flakes

Instructions

  1. In a large bowl, combine the ground deer meat, cold water, liquid smoke, garlic powder, onion powder, paprika, mustard seeds, black pepper, sugar, curing salt, and red pepper flakes. Mix well until all the ingredients are evenly incorporated.

  2. Shape the mixture into a log shape, about 2 inches in diameter.

  3. Preheat the oven to 300°F (150°C). Place the deer bologna log on a baking sheet lined with parchment paper.

  4. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

  5. Once cooked, remove from the oven and let it cool completely. Slice the bologna into thin rounds.

  6. Serve the deer bologna as a delicious appetizer or snack.
