Ingredients

  • 2 large eggplants
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 2 eggs
  • Vegetable oil, for frying

Instructions

  1. Slice the eggplants into 1/2-inch thick rounds.

  2. In a shallow bowl, whisk together the flour, breadcrumbs, salt, and black pepper.

  3. In another bowl, beat the eggs.

  4. Dredge each eggplant slice in the flour mixture, dip it in the beaten eggs, and coat it again in the flour mixture.

  5. Heat enough vegetable oil in a large skillet over medium heat.

  6. Fry the coated eggplant slices in batches for 2-3 minutes per side, until golden brown and crispy.

  7. Transfer the cooked eggplant slices to a paper towel-lined plate to remove excess oil.

  8. Serve the pan-fried eggplant hot and enjoy!
