How To Make Edamame Falafel Wraps

Ingredients
- 2 cups cooked edamame beans
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 4 whole wheat wraps
- 1 cup sliced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup tzatziki sauce
Instructions

In a food processor, combine edamame beans, breadcrumbs, parsley, garlic, cumin, coriander, salt, and black pepper. Pulse until well combined and mixture holds together when pressed.

Shape the mixture into small falafel patties.

Heat olive oil in a large skillet over medium heat. Cook the falafel patties until golden brown on both sides, about 4-5 minutes per side.

Warm the whole wheat wraps according to package instructions.

To assemble the wraps, spread a spoonful of tzatziki sauce onto each wrap. Top with falafel patties, sliced tomatoes, diced cucumber, and diced red onion.
