- 1 pound of carrots, peeled and thinly sliced
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of honey
- 1 clove of garlic, minced
- Salt and pepper to taste
- Fresh parsley, for garnish
