Serves:
Ingredients
- 1 lb chicken breast, sliced
- 2 blood oranges, juiced
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp cornstarch
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup snap peas
- 1/4 cup chopped green onions
- Salt and pepper, to taste
Instructions
-
In a small bowl, whisk together the blood orange juice, soy sauce, honey, cornstarch, garlic, and ginger. Set aside.
-
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook until browned and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
-
In the same skillet, add the sliced bell peppers and snap peas. Cook for 2-3 minutes, until slightly tender.
-
Return the chicken to the skillet and pour the blood orange sauce over the chicken and vegetables. Stir to coat everything in the sauce. Cook for an additional 2-3 minutes, until the sauce thickens and coats the chicken and vegetables.
-
Serve the sticky chicken and blood orange stir fry over steamed rice or noodles. Garnish with chopped green onions.
