Ingredients

  • 8 oz of rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves of garlic, minced
  • 1 cup of diced vegetables (carrots, bell peppers, and broccoli)
  • 1/2 cup of hoisin sauce
  • 1/4 cup of soy sauce
  • 2 tbsp of honey
  • 1 tsp of sesame oil
  • 1/4 cup of chopped green onions, for garnish
  • 1/4 cup of chopped peanuts, for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. In a large pan, heat the vegetable oil over medium heat. Add the minced garlic and sauté for 1 minute.

  3. Add the diced vegetables to the pan and cook until they are tender, about 5 minutes.

  4. In a small bowl, whisk together the hoisin sauce, soy sauce, honey, and sesame oil.

  5. Pour the sauce over the vegetables in the pan and stir to combine. Cook for 2 minutes, or until heated through.

  6. Add the cooked rice noodles to the pan and toss to coat them evenly with the sauce and vegetables.

  7. Cook for an additional 2-3 minutes, until the noodles are heated through.

  8. Serve the sticky noodles with a sprinkle of chopped green onions and chopped peanuts on top.
