Ingredients

  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can of diced tomatoes
  • 1 can of kidney beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 can of white beans, drained and rinsed
  • 2 cups of vegetable broth
  • 2 teaspoons of paprika
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until the onion becomes translucent.

  2. Add the diced red and green bell peppers to the pot and cook for another 5 minutes.

  3. Stir in the diced tomatoes, drained kidney beans, black beans, and white beans.

  4. Pour in the vegetable broth and add the paprika, chili powder, cumin, salt, and pepper. Stir well to combine.

  5. Bring the mixture to a simmer and let it cook for 30 minutes, stirring occasionally.

  6. Taste and adjust the seasonings if needed.

  7. Serve the mixed bean goulash hot, garnished with fresh chopped parsley.
