Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or griddle pan over medium-high heat.

  2. Season the chicken breasts with salt, pepper, and dried oregano.

  3. Grill the chicken for about 6-8 minutes per side, or until cooked through.

  4. While the chicken is grilling, rinse the quinoa under cold water and cook according to package instructions.

  5. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, lemon juice, and olive oil. Season with salt and pepper to taste.

  6. Once the chicken is cooked, let it rest for a few minutes before slicing.

  7. Serve the sliced chicken on top of the quinoa Greek salad.
