Ingredients

  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 100g unsalted butter, softened
  • 100g granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 100g mixed dried fruits (such as raisins, currants, and cranberries)
  • 50g chopped nuts (such as almonds or walnuts)
  • Optional: 50g candied ginger, chopped
  • Optional: 50g dark chocolate chips

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a small round cake pan.

  2. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and cloves.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Fold in the mixed dried fruits, nuts, and any optional ingredients of your choice.

  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  8. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  10. Serve as-is or dust with powdered sugar for garnish.
