How To Make Semi-dried Tomatoes

This recipe features tangy and sweet semi-dried tomatoes – perfect for adding a burst of flavor to salads, pasta, or sandwiches.

Ingredients

  • 2 lbs of plum tomatoes
  • 2 tbsp of olive oil
  • 1 tsp of sea salt
  • 1 tsp of dried oregano
  • 2 cloves of garlic, minced
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 225°F (110°C).

  2. Cut the plum tomatoes in half lengthwise and remove the seeds.

  3. Place the tomatoes, cut side up, on a baking sheet lined with parchment paper.

  4. Drizzle the tomatoes with olive oil and sprinkle with sea salt, dried oregano, minced garlic, and freshly ground black pepper.

  5. Bake the tomatoes in the preheated oven for 4-5 hours, or until they are semi-dried and slightly shriveled.

  6. Remove the tomatoes from the oven and let them cool completely before transferring to an airtight container.

  7. Store in the refrigerator for up to 2 weeks.
