  • 4 stalks of rhubarb
  • 1/4 cup of sugar
  • 1/2 tsp of vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Wash the rhubarb stalks and trim off the ends. Cut them into 1-inch pieces.

  3. In a mixing bowl, toss the rhubarb pieces with sugar and vanilla extract until evenly coated.

  4. Transfer the coated rhubarb to a baking dish and spread it out in an even layer.

  5. Roast in the preheated oven for 15-20 minutes, or until the rhubarb is tender but still holds its shape.

  6. Remove from the oven and let it cool slightly before serving.
