How To Make Low Carb Instant Pot Beef Stew Recipe
A hearty low-carb beef stew cooked to perfection in an instant pot with tender beef and flavorful vegetables.

Ingredients
- 1 lb. beef stew meat
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 2 large carrots, chopped
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- 1 tsp. paprika
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 1/2 cups beef broth
- 1 tbsp. tomato paste
- 1 bay leaf
- 1 tbsp. cornstarch (optional)
- 1 cup sliced mushrooms (optional)
Instructions

Press the sauté button on your instant pot. Heat the olive oil and sauté the onion and garlic until they are soft and translucent.

Add the beef stew meat to the pot and brown it on all sides.

Add the celery, carrots, thyme, rosemary, paprika, salt, and black pepper. Stir until all the vegetables and meat are well coated.

Add the beef broth, tomato paste, and bay leaf to the pot and stir everything together.

Secure the instant pot lid and make sure the valve is set to sealing. Press the stew button to set the cooking time for 50 minutes.

Once the cooking time is complete, carefully release the pressure using the quick release valve.

Optional: mix cornstarch with a little water and stir into the stew to thicken it. Add sliced mushrooms (optional) and sauté until tender.

Ladle the beef stew into bowls and serve hot.
