How To Make Mom’s Hearty Beef Stew with Dumplings

- 1.5 pounds beef stew meat, cut into cubes
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 3 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon dried rosemary
- 1/2 cup milk
- 2 tablespoons melted butter
Instructions

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the beef stew meat and brown on all sides. Remove the beef from the pot and set aside.

In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

Return the beef to the pot and stir in the beef broth, red wine (if using), tomato paste, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 hours, or until the beef is tender.

In a mixing bowl, combine the flour, baking powder, salt, and dried rosemary. Stir in the milk and melted butter until a sticky dough forms.

Drop spoonfuls of the dumpling dough onto the surface of the stew. Cover the pot and cook for an additional 20 minutes, or until the dumplings are cooked through.

Remove the bay leaves and serve the beef stew with dumplings hot.
