How To Make Slow Cooker Beef Stew with Red Wine

- 2 pounds beef stew meat, cut into cubes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and diced
- 1 cup red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions

In a large zip-top bag, combine the flour, salt, and black pepper. Add the beef stew meat and shake to coat.

Heat olive oil in a large skillet over medium-high heat. Add the coated beef stew meat and cook until browned on all sides. Transfer the meat to the slow cooker.

In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.

Add the onions, garlic, carrots, potatoes, red wine, beef broth, tomato paste, dried thyme, and bay leaf to the slow cooker. Stir to combine.

Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are cooked through.

Serve the slow cooker beef stew hot, garnished with fresh parsley if desired.
