Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 1 cup dried lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves of garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 can diced tomatoes
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.

  2. In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

  3. Add the beef back into the pot, along with the lentils, beef broth, water, diced tomatoes, thyme, and rosemary. Season with salt and pepper.

  4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 2 hours or until the beef is tender and the lentils are cooked through.

  5. Taste and adjust the seasoning if needed.

  6. Serve the beef and lentil soup hot and enjoy!
