
How To Make Slow Simmer Beef Stew

Ingredients
- 1.5 pounds beef stew meat, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 cup red wine (optional)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
Instructions

In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

In the same pot, add the diced onion, sliced carrots, diced potatoes, and minced garlic. Cook for 5 minutes, or until the vegetables are slightly softened.

Stir in the tomato paste and cook for an additional 2 minutes.

Return the browned beef stew meat to the pot. Add the beef broth, red wine (if using), dried thyme, and bay leaf. Season with salt and pepper to taste.

Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the beef is tender.

Remove the bay leaf before serving. Serve the slow simmer beef stew hot with crusty bread or rice.
