
How To Make Beef and Lentil Stew

Ingredients
- 1 pound beef stew meat, cubed
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 4 cups beef broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions

In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables start to soften, about 5 minutes.

Stir in the tomato paste and cook for another minute.

Return the beef to the pot and add the lentils, beef broth, bay leaf, and dried thyme. Season with salt and pepper.

Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender and the lentils are cooked through.

Remove the bay leaf before serving.
