- 1.5 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 potatoes, peeled and cubed
- 1 bay leaf
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth
- 1 cup red wine
- 1 tbsp tomato paste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until onions are translucent and garlic is fragrant.

Add the carrots, potatoes, bay leaf, paprika, thyme, salt, and black pepper to the pot. Stir well to coat the vegetables with the spices.

Return the browned beef stew meat to the pot. Add the beef broth, red wine, and tomato paste. Stir to combine.

Bring the stew to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.

Remove the bay leaf before serving. Garnish with fresh chopped parsley.
