  • 2 cans of black beans, rinsed and drained
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 carrot, diced
  • 4 cups of vegetable broth
  • 1 can of diced tomatoes
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, bell pepper, jalapeno, and carrot. Cook until the vegetables are tender, about 5 minutes.

  2. Add the black beans, vegetable broth, diced tomatoes, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

  3. Use an immersion blender or a regular blender to blend the soup until smooth and creamy.

  4. Return the soup to the pot and heat through.

  5. Serve hot, garnished with fresh cilantro.
