Ingredients

  • 1 lb sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 2 tbsp vegetable oil
  • 2 tbsp all-purpose flour
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the sausage and cook until browned. Remove from the pot and set aside.

  2. In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are softened.

  3. Sprinkle the flour over the vegetables and stir well to combine.

  4. Slowly pour in the chicken broth and diced tomatoes. Stir in the Cajun seasoning, salt, and pepper.

  5. Add the cooked sausage back to the pot and bring the mixture to a simmer. Cook for 20 minutes, stirring occasionally.

  6. Add the shrimp to the pot and cook for another 5-7 minutes, or until the shrimp are cooked through.

  7. Serve the gumbo over cooked rice and garnish with fresh parsley.
