  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Optional toppings: grated cheese, fresh parsley


  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.

  3. Stir in the sliced carrots and celery, and cook for an additional 5 minutes.

  4. Pour in the diced tomatoes, beef broth, dried basil, and dried oregano. Bring the soup to a simmer.

  5. Reduce the heat to low and let the soup simmer for about 25 minutes, or until the vegetables are tender.

  6. Season with salt and pepper to taste.

  7. Serve the vegetable beef soup hot, topped with grated cheese and fresh parsley if desired.
