  • 1 lb ground beef
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 4 cups beef or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Plain yogurt (for serving)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.

  2. Add the chopped onion and minced garlic to the pot, and sauté until the onion is softened.

  3. Stir in the tomato paste, turmeric, cumin, paprika, cinnamon, and cayenne pepper, and cook for 2 minutes to enhance the flavors.

  4. Add the beef or vegetable broth, diced tomatoes, and kidney beans to the pot. Season with salt and pepper to taste.

  5. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 30 minutes to allow the flavors to meld together.

  6. Serve the Aush hot, garnished with fresh cilantro and accompanied by a dollop of plain yogurt and lemon wedges.
