  • 250g lamb or beef, cut into small pieces
  • 2 onions, finely chopped
  • 3 carrots, julienned
  • 2 bell peppers, thinly sliced
  • 4 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 liter beef or vegetable broth
  • 200g noodles (preferably flat or wide)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Fresh lime wedges (for serving)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the lamb or beef and cook until browned. Remove from the pot and set aside.

  2. In the same pot, add the onions, carrots, bell peppers, and garlic. Cook until the vegetables are softened.

  3. Stir in the tomato paste, ground cumin, ground coriander, and paprika. Cook for an additional 2 minutes.

  4. Return the meat to the pot and pour in the beef or vegetable broth. Bring to a boil, then reduce heat and simmer for 1 hour.

  5. Meanwhile, cook the noodles according to package instructions. Drain and set aside.

  6. Once the soup has simmered for an hour, add the cooked noodles and season with salt and pepper to taste. Cook for another 10 minutes.

  7. Serve the Lagman hot, garnished with fresh cilantro and lime wedges on the side.
