How To Make Copycat Pollo Loco Chicken Tortilla Soup

  • 2 tsp olive oil
  • 1 medium-sized onion (chopped)
  • 4 garlic cloves (minced)
  • 1 medium-sized jalapeno pepper (chopped)
  • 1/2 medium-sized green pepper
  • 4 small boneless and skinless chicken breasts
  • 2 cup frozen corn
  • 1/2 cup dry white wine
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1/4 tsp. cayenne pepper
  • 14 oz chicken broth
  • 14 oz diced tomatoes
  • 8 oz tomato sauce
  • 1 cup tortilla chips
  1. Sauté the onions, garlic, jalapeño peppers, and green peppers with olive oil in a large pot until they soften.

  2. Add all the rest of the ingredients to the large pot and bring it to a boil.

  3. After about 15 minutes, remove the chicken breasts and shred them.

  4. Return the shredded chicken to the pot and simmer its contents for an additional 45 minutes.

  5. Once your dish is done cooking, serve it with a topping of crushed tortilla chips if desired. Enjoy!
