Serves:

Ingredients

  • 6 cups of chicken stock
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno, seeded and minced
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 2 tbsp of tomato paste
  • 2 tsp of cumin
  • 1 tsp of chili powder
  • Salt and pepper to taste
  • 2 cups of shredded cooked chicken
  • Tortilla chips, for serving
  • Lime wedges, for serving
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, bring the chicken stock to a simmer.

  2. Add the diced red onion, red and green bell pepper, and jalapeno to the pot and let cook for 5-7 minutes until softened.

  3. Stir in the black beans, corn kernels, tomato paste, cumin, and chili powder.

  4. Season with salt and pepper to taste.

  5. Let the soup simmer for another 10-15 minutes until the vegetables are tender.

  6. Stir in the shredded cooked chicken and let cook for an additional 5 minutes.

  7. Serve the soup hot with tortilla chips on top, lime wedges on the side, and fresh cilantro for garnish.
