How To Make Cabbage, Kielbasa, and Rice Soup

Use good-quality kielbasa to give this rice soup a rich heartiness that is highlighted by the smoky, garlicky, and peppery flavors of the dish.

Ingredients

  • cupschicken broth,low sodium
  • 1cupwhite rice,long grain
  • 1tbspvegetable oil
  • ¾lbkielbasa
  • 1onion
  • ½mediumgreen cabbage
  • kosher salt and freshly ground pepper

Instructions

  1. In a medium saucepan, combine 1¾ cups of the chicken broth with the rice and bring to a simmer. Cover and cook over low heat for 18 minutes, until the rice is tender.

  2. Meanwhile, in a soup pot, heat the oil. Add the kielbasa and cook over moderately high heat for about 4 minutes, until lightly browned.

  3. Add the onion and cabbage and cook for about 6 minutes, until softened. Add the remaining 6 cups of broth and bring to a simmer.

  4. Cook over moderately low heat for 10 minutes until the cabbage is tender. Season with salt and pepper, stir in the rice, and serve.
