How To Make Quick Salmon Salad

Ingredients

  • 1 lb fresh salmon fillets
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup sliced almonds
  • 1/4 cup fresh dill, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper. Bake for 10 minutes or until cooked through. Let it cool.

  2. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, sliced almonds, and fresh dill.

  3. Break the cooled salmon into chunks and add it to the salad bowl.

  4. In a small bowl, whisk together lemon juice, extra virgin olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  5. Serve the quick salmon salad immediately and enjoy!
