Ingredients

  • 4 salmon fillets
  • 4 slices of prosciutto
  • 6 cups of mixed greens
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of sliced cucumber
  • 1/4 cup of sliced red onion
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of sliced almonds
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. Season the salmon fillets with salt and pepper.

  2. Wrap each salmon fillet with a slice of prosciutto, securing it with toothpicks if needed.

  3. Place the wrapped salmon fillets on the grill and cook for about 4-5 minutes per side, or until the salmon is cooked through and the prosciutto is crispy. Remove from heat and set aside.

  4. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and sliced almonds.

  5. In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper to taste.

  6. Drizzle the dressing over the salad and toss to combine.

  7. Divide the salad among four plates and top each plate with a grilled salmon fillet.

  8. Serve immediately and enjoy!
