Serves:
Ingredients
- 2 pounds fresh mussels, scrubbed and debearded
- 1 cup canned crushed tomatoes
- 1/2 cup dry white wine
- 1/4 cup olive oil
- 1/4 tsp red pepper flakes
- 1/4 tsp smoked paprika
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat. Add the minced garlic and cook for one minute.

Pour in the canned tomatoes and stir to combine. Add the white wine, red pepper flakes, salt, and black pepper; stir.

Bring the sauce to a simmer and cook for 5-10 minutes, until it thickens slightly.

Add the fresh mussels to the pot, cover, and steam for 5-7 minutes or until the mussels have opened.

Discard any mussels that did not open.

Stir in the chopped parsley and smoked paprika.
