How To Make Mussels in Tomato Cream Sauce

Serves:

Ingredients

  • 2 lbs of mussels, cleaned and debearded
  • 2 tbsp of olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can of diced tomatoes, drained
  • 1/2 cup of heavy cream
  • 1/4 cup of white wine
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté for 2-3 minutes until soft.

  2. Pour in white wine and stir for 1 minute, then add canned tomatoes and stir well.

  3. Add salt and pepper to taste.

  4. Add cleaned mussels to the pan and cover, cooking for 5-7 minutes or until the mussels are opened.

  5. Remove the mussels from the pan and set aside. Add heavy cream to the pan and bring the sauce to a simmer.

  6. Cook for 5 minutes until the sauce has thickened.

  7. Serve the mussels hot, topped with the creamy tomato sauce and garnished with fresh parsley.
