Ingredients

  • 2 lbs fresh mussels
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp red pepper flakes
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 2 tbsp chopped fresh parsley
  • salt and pepper to taste

Instructions

  1. Clean and debeard mussels.

  2. In a large pot, heat olive oil and cook onion, garlic, and red pepper flakes until soft.

  3. Add diced tomatoes and vegetable broth and bring to a boil.

  4. Add mussels to the pot and cover with a lid.

  5. Cook until mussels open, about 5-7 minutes. Discard any unopened mussels.

  6. Stir in parsley and salt and pepper to taste.

  7. Serve hot with crusty bread.
